I don’t cook much with pork because it is too easy to overcook and get dry, almost like chicken breasts. But, unlike chicken breasts, I find that pork is very flavourful.
Cooking pork tenderloin in Instant Pot is a great way to get succulent and delicious pork with very little effort or room for error. Just set everything in an electric pressure cooker, click on the time, and wait.
Instant Pot Pork Tenderloin with Mushrooms is a delicious meal. It’s simple and easy recipe for a quick weeknight dinner. The mushroom sauce is rich and creamy yet it is dairy-free and also gluten-free.
Ingredients to make Instant Pot Pork Tenderloin with Mushrooms
- Vegetable oil
- Pork tenderloin
- Onion
- Mushrooms
- Seasonings (I use: garlic salt, Mrs Dash, fresh thyme)
- Vermouth
- Broth (vegetable or chicken)
- Cornstarch
How to make Pork Tenderloin with Mushroom Sauce in Instant Pot
This meal is very easy but it requires a few steps. There are mainly three steps to the recipe: sauté the meat and the vegetables, cook everything under pressure, thicken the sauce with cornstarch.
- Sear the pork tenderloin for a few minutes on each side in Instant Pot. No need to cook it through, just to get colour.
- Sauté the onions and mushrooms in Instant Pot for a few minutes, add the seasonings, then Vermouth to deglaze the pot.
- Place the pork tenderloin over the mushrooms, add the broth, and cook on High Pressure for 5 minutes.
- Once it’s cooked, do a Natural Pressure Release for 25 minutes.
- Remove the pork from the pot to rest for a few minutes.
- Meanwhile, add a couple of tablespoons of hot broth from Instant Pot to a bowl with cornstarch and mix until a slurry forms.
- Add the slurry back to the mushrooms and sauté for another 3-4 minutes until the mushroom sauce thickens. Serve it over the pork.
Questions and Answers about making Pork Tenderloin with Mushroom Gravy in Instant Pot
Can you double the recipe?
Yes, you can double the recipe easily. It is also one of those recipes that does not require any adjustments to timing if you double it but only if you use two pork tenderloins instead of one that is bigger in size.
So, no need to double the cooking time if you double the recipe. Use the same cooking time.
Note: if you want to use a bigger pork tenderloin then the timing may need to be adjusted. I haven’t tried cooking 2-pound pork tenderloin in my Instant Pot, so I cannot recommend specific cooking time for it.
Do you need to sear pork and sauté vegetables?
Searing pork creates a beautiful crust on the meat and also adds flavour. Sautéing vegetables also develops flavours.
However, if you are in a hurry, you can omit those steps. Just add the onions, mushrooms, and seasonings to Instant Pot, layer a pork tenderloin over it, add the broth and follow the rest of the instructions. This way the recipe will be a true dump and start recipe.
Timing doesn’t need to be adjusted, although if it makes you feel safer, you can add a minute to cooking time.
Can this recipe be used for a different cut of pork?
Most likely yes but the timing may need to be adjusted. Bigger and thicker cuts of pork may require longer cooking time. Whereas thinner pork chops may require less cooking time.
Can you use something other than Vermouth?
Vermouth is one of my favourite ways to deglaze pots and pans. It is a strong liquor that can last for months (if not years) unlike wine, so I always have a bottle in my cupboard.
Vermouth is very savoury and earthy and it always adds a delicious flavour to meals. You can use wine, broth, or even just water to deglaze the pan instead of Vermouth.
What broth to use?
You can use chicken or vegetable broth. I exclusively use this brand whenever broth is part of a recipe.
Can you adjust the seasonings?
Yes, you definitely can. You can adjust the spices any way you like and change the meal up by using different herbs and flavours, making it unique every time.
I love using Mrs Dash seasoning as it is a very savoury blend of herbs and spices. I highly recommend having it as part of your kitchen staple.

Ingredients
- 1 tablespoon oil
- 1 pound pork tenderloin
- 1 onion, diced
- 1/2 pound mushrooms, sliced
- 1/2 teaspoon garlic salt (or more to taste)
- 1 teaspoon Mrs Dash Original Blend
- 2 teaspoons fresh thyme
- 2 tablespoons Vermouth
- 1 cup broth (chicken or vegetable)
- 2 tablespoons cornstarch
Instructions
- Press Sauté button on Instant Pot.
- Add half the oil to the pot and wait for the display to read Hot and for the oil to heat up.
- Sear the pork tenderloin for a few minutes on each side in Instant Pot. No need to cook it through, just to get colour. Remove the pork.
- Add the rest of the oil to the pot and sauté the onions and mushrooms in Instant Pot for a few minutes, stirring occasionally.
- Add the seasonings, then Vermouth to deglaze the pot. Make sure to scrape the bottom of the pot so that nothing is stuck to it.
- Place the seared pork tenderloin over the mushrooms and add the broth to the pot.
- Close the lid. Turn the valve to sealing.
- Press Manual or Pressure Cooker button (depending on your model) and using the arrow buttons set the cook time to 5 minutes. Use default High Pressure.
Depending on your Instant Pot model, it'll take around 5 minutes to come to pressure. - Once the Instant Pot beeps that the 5 minutes of cooking are done, do a Natural Pressure Release for about 20-25 minutes. It means that do nothing for 20-25 minutes and the pressure will naturally release from the pot. If Instant Pot is still under pressure after 20-25 minutes, then do a Quick Release, this should be very quick.
- Open the lid and remove the pork from the pot to rest for a few minutes.
- Meanwhile, add a couple of tablespoons of hot broth from Instant Pot to a bowl with cornstarch and mix until a slurry forms.
- Add the slurry back to the mushrooms and sauté for another 3-4 minutes stirring occasionally until the mushroom sauce thickens.
- Serve the mushroom gravy over the pork tenderloin.

If your pork tenderloin is smallish, 5 minutes high pressure was too long. The tenderloin was dry and over cooked, also found the gravy bland and slick, instead of a slurry of cornstarch, I will try butter and flour which would improve the flavour and appearance.

I made this last week and it was amazing. I didn’t have the vermouth. I hope I spelled that correctly. The pork was perfectly cooked and tender. It was like a hot knife through butter tender. I will make it again tomorrow night. My family loved it with egg noodles. Two other friends made this in their pressure cooker and they were not disappointed at all
